Bambiline (Dandelion) Jelly

Bambiline Jelly got its name from Dandelion Jelly.  When children are young they are look at the world as though everything is a miracle and dandelions are one of those miracles.  They race out and pluck off their spike-y, yellow heads and bringing them back to their parents proudly.  Do children know something we don’t?  The dandelion is one of nature’s many miracles offering medicinal and nutritional value to our bodies.


A fun way to introduce nature’s gifts to young children is to make Dandelion Jelly.  When we first made this jelly my kids couldn’t pronounce it properly so it became known as “Bambiline” jelly in our house.  It was incredibly fun watching them race through the green grass to the yellow flowers poking up and placing them in their little baskets.  Attached is a recipe for this fun activity, just make sure that you always harvest dandelions in a yard or field that has not been treated with chemicals.  Then watch the magic begin.


|| "Bambiline" Jelly ||

4 cups water
4 cups dandelion blossoms (yellow and white parts only)
1/4 cup plus 1 1/2 teaspoons (1/2 package) powdered pectin
4 1/2 cups granulated sugar
2 tablespoons fresh lemon juice
A few drops of yellow food coloring (optional)

  • Bring water and dandelion blossoms to a boil in a medium saucepan. Reduce heat to medium, and simmer for 3 minutes. Remove from heat, and let stand for 10 minutes. Strain through a fine sieve into a measuring cup, pressing solids. Discard blossoms. (You should have 3 cups of liquid; add water if necessary.)

  • Combine pectin and 1/2 cup sugar in a small bowl. Bring dandelion liquid and remaining 4 cups sugar to a boil, stirring constantly to dissolve sugar. Add the pectin mixture, stirring constantly to dissolve pectin and sugar. Add lemon juice and optional yellow food coloring, and boil for 1 minute. Skim foam from the surface. Let cool slightly.

  • Pour mixture into an airtight container. Cover with a lid. Refrigerate until set, about 4 hours.

    P.S. The jelly tastes like honey.  Have fun!
